Clássico da culinária francesa, esse ensopado nasceu como uma comida simples do interior, feita para aproveitar cortes de carne mais duros, que ganham maciez depois de um cozimento lento e cuidadoso. A carne é preparada no vinho tinto, junto com legumes e ervas aromáticas, criando um molho profundo, encorpado e cheio de camadas de sabor. O resultado é daqueles que confortam: carne que desmancha na boca, um caldo rico e envolvente e um aroma que transforma qualquer refeição em um momento especial. É comida com cara de casa, mas com um toque elegante que impressiona.
E o melhor de tudo é que, apesar do nome sofisticado, o preparo é muito mais simples do que parece. Não exige técnicas complicadas, só um pouco de tempo e carinho no processo. É o tipo de receita perfeita para fazer com calma, deixar cozinhando enquanto a casa se enche de perfume — e depois servir com orgulho, como se tivesse saído direto de uma cozinha francesa.
INGREDIENTES
- 1 kg de acém em cubos grandes cerca de 4 cm
- 1 xícara chá de vinho tinto seco
- 2 folhas de louro
- 2 colheres sopa de tomilho fresco
- 200 g de cogumelo-de-paris opcional
- 2 cenouras
- 1 talo de salsão
- 500 g de cebola pérola ou cebola comum
- 3 dentes de alho
- 70 g de bacon em cubos
- 1 colher sopa de extrato de tomate
- 2 colheres sopa de farinha de trigo
- 3 xícaras chá de água
- Azeite a gosto
- Sal e pimenta-do-reino a gosto
MODO DE FAZER
- Comece marinando a carne com o vinho, o louro e o tomilho. Deixe descansar na geladeira por pelo menos 3 horas — esse tempo faz toda a diferença no sabor.
- Na hora de cozinhar, escorra bem a carne (reserve o líquido!) e deixe os pedaços levemente secos. Tempere com sal e pimenta e envolva com a farinha.
- Aqueça uma panela grande com azeite e doure a carne aos poucos. Esse passo é essencial para criar sabor, então faça com calma e evite amontoar os pedaços. Reserve.
- Na mesma panela, doure o bacon. Em seguida, acrescente o alho e o extrato de tomate, mexendo rapidamente para liberar os aromas.
- Despeje o líquido da marinada junto com a água, raspando o fundo da panela para aproveitar todos os sabores concentrados.
- Volte a carne para a panela e junte a cenoura e o salsão. Quando começar a ferver, abaixe o fogo e cozinhe com a panela semi-tampada até a carne ficar bem macia.
- Acrescente as cebolas e cozinhe por mais 15 minutos.
- Por fim, adicione os cogumelos e cozinhe por mais 5 minutos. Ajuste o sal, finalize com pimenta e pronto — um prato digno de restaurante, feito na sua cozinha.

- Não pule a etapa de dourar a carne — ela faz toda a diferença no sabor final
- Prefira vinho tinto seco de boa qualidade (não precisa ser caro, mas escolha um que você beberia)
- O prato fica ainda melhor no dia seguinte
- Se quiser engrossar mais o molho, deixe cozinhar sem tampa nos minutos finais
